The " Domaine du Mortier " is
composed of 9 hectares
in the controlled appellation of Saint-Nicolas de Bourgueil.
Grape variety : cabernet franc
Our cultur is very traditional. We dont use
chemical weed-killer, so that we must work the soil oftener.
Our intention for the culture is the establishment of a biological
agriculture in the vineyard.
The fermentation tries to respect the natural quality of the grape
variety cabernet franc and the soil too. We dont use artificial
yeast, we clear our wines only with egg-white, so that it stays
in the bottle a natural deposit.
